Cream Cheese Mints

There is one thing about my Grandma that I will always remember, long after she is gone...

Cream Cheese Mints.

Steve doesn't really care for said mints. But to me they are the best candy ever. Probably more for the memories that they bring than for the actual taste.
I remember my Grandma making them with me all the time when I was little. One specific time, was when I was staying with her, while my Mom was in the hospital giving birth to one of my younger siblings. I remember making them to take to the hospital. They are so easy to make that, I guess to entertain me longer, my Grandma pulled out my aunts 'easy bake oven' to prolong the process. I would press the candy into the mold, pop it out and place it on the little cooking sheet and place it in the oven. Then we would wait (wait for what? I have no idea, because they didn't need to cook at all). I think I ended up eating most of them, my Mom only got a few.
Still, one of my favorite things. My Grandma even made a million of them, so that we could serve them with the food at my wedding reception.

Well, tonight I had a craving. I don't know where it came from. It's actually been years since I have had one of these little mints. But, I had a block of cream cheese in my refrigerator, and a bag of powdered sugar in the pantry.

I searched allrecipes.com and found it.

3 oz cream cheese
1 tbsp butter
1/4 tsp mint extract
3 cups powdered sugar

Mix softened cream cheese, butter, and mint extract together until smooth. You could also add a drop or two of food coloring at this point. Add powdered sugar slowly. As the mixture becomes thicker mix by hand.
You may also have to add additional powdered sugar if the mix is too sticky.

form into balls, roll in granulated sugar, place on wax paper to dry. Press down with fork. Or you could press the balls into candy molds to get cute little shapes. There were even comments on there that you could roll it out and cut out shapes with cookie cutters.
The possibilities are limitless!!

Don't you love those grandparent memories. The tough part is going to be finding that recipe for our grandchildren. I don't want them saying my grandma made great frozen dinners (because that is what Tyler tells people).

Oh I love these too!!! I don't think I realized that Grandma made them. Hmmm not good for my diabetes but I sure feel a craving comming on now!! I don't even have to worry about there being nuts in them!! Yippee, looks like I know what our next project is going to be, just have to convince the hubby that I need to go to the store again (in the 6 inches of snow we are in the process of getting) Hmmm hmmm thanks for posting the recipe too!

The Grandparent memories are the best. But you're right Julie. I have no idea what that memory will be for my Grandkids. I'm not domestic at all. Maybe I'll have to steal this one from my Grandma, but none of my boys have an easy bake oven! Ha,ha

Ruthanne, good luck on getting the hubby to go out and get the ingredients. Just eat them slowly, and they shouldn't hurt the diabetes. : ) right?
Kind of funny, with all of the memories of grandma that I have, this would seem to be the strongest. But I guess, it's tied to food. That should say everything. Just like I'll always remember Grandpa's Swampwater punch. Do you remember that?

I don't remember swapwater punch. Fill me in. I think the strongest memories I have of Grandpa are his smile. Everytime I saw him he was always smiling and would give big hugs. I always remember him being kind and happy.

Grandpa's "swampwater" was just that. Swamp Water. He would make punch out of whatever he could find in the house. You probably drank it a million times, not realizing what he called it (or what was in it). When I was really little, his base was usually lemonaide. He would add whatever he could find to it to spice it up. When I was older, he would use orange juice. But sometimes he would add a pack of koolaide to it with some pineapple juice. Or cranberry juice with grapefruit juice. It was never the same, but very rarely did it ever taste bad. Because if it did, he would just find something else to put in it to make it taste better. Kind of funny, but good.
I don't think I could ever recreate any of them. I wouldn't even know where to start.

We made the mints!!! Loved them, tasted exactly the way I remembered. It has been so long. went looking for one today (although the diabetes says noooo) and what up??? My little Genaro had finished off what was left of the bag. He said they were so good, sorry. Better for him then for my sugar levels eh? Thanks again for sharing!
